From Scratch

I've been playing house for the past few days, that's why I haven't been around.
Which is why I lost a follower. (You suck, dude.)

I've made dinner every night, and since the dishwasher is broken I've had to do the dishes by hand.
I cleaned the house, so I haven't had to clean anything since then.
I'm going to do laundry before my mom comes home, so that she doesn't have to deal with that.

Tonight I made some really simple food that was healthy, but still really yummy.

I'll share the recipes...

First I made little personal pizzas.
Trust me, real easy.

Preheat the oven to 400 degrees.

Get a package of pita pockets. They're the right size for a personal pizza.Get some low fat mozzarella cheese, or normal if you don't care as much for the health value. Shred it up and set it to the side in a bowl.

Get a jar of tomato/pizza sauce. I used Ragu pizza sauce, even though my mom doesn't like it. I figured I would try it. It barely had sodium or calories etc., so it was a healthy choice.

Spread a layer of pizza sauce onto a pita pocket. Then sprinkle as much cheese as you'd like on top of the sauce.

Put in the oven for about 8-10 minutes, until the cheese starts to brown. Take them out and let them cool for 5 minutes.
Tada, personal pizzas.

So you need:
As much Mozzarella cheese as you'd like. I only needed about a 1 1/2 cups.
A jar of pizza sauce (I used Ragu)
A package of pita pockets

I also made mozzarella sticks.

Turn the oven down to 350 degrees.

Get a block of mozzarella cheese. Chop it up into as many sticks as you'd like, whatever size you'd like. (I made them about the size of half a string cheese stick).

Mix two eggs in a bowl until they're really mixed together.

Get a cup of plain bread crumbs. Mix in any kind of seasoning you'd like. I used some italian pasta seasoning.

Pour the crumbs and seasoning in a skillet and cook over medium heat for about 5 minutes until it's browned.

Taken the skillet off of the heat and mix in about 1/3 a cup of grated parmesan cheese.
Dip the cheese sticks into the egg, and then roll in the crumb/cheese mixture and put on a cookie sheet.

Once all of the sticks are coated and on the sheet, put in the oven for about 6-7 minutes. Make sure to watch that they don't get melted into a blob. I didn't have a problem with it, but it's still something you need to watch.

Take them out, let them cool, serve with more pizza sauce.

Honestly it all took me about 20 minutes. The mozzarella sticks were a lot healthier since they weren't fried, but they tasted just like they do from a restaurant.

So you need for that:
Sticks of mozzarella cheese
1 cup bread crumbs
Italian seasoning (as much as you'd like)
1/3 cup parmesan cheese
2 eggs

Sorry for the crapload of recipes. It was really good, and a lot healtier than other things.
Plus it was quick to make.

My mom's been calling me to let me know how it's going in Tennessee.
My grandma is doing a little better. But she's still in hospice.

My mom's coming home on Thursday, so I'm excited to have her back.
Hopefully since I'm not working at all this week I don't get cabin fever.

seriously, never heard of homemade mozzerella sticks before! Yum!

I usually don't like mozzeralla sticks because of the frying, but those sound good!
